The Teldra – as the people of the Valle Aurina are known – are a breed apart. Strong in character, headstrong and full of vision. Because in a place where the mountains rise almost vertically into the sky, it takes more than courage – it takes the will to grow wings. And trusting one another becomes second nature. No questions asked. Tina Marcelli may well be the perfect blueprint of a true Teldrarin. To truly grasp her culinary language, you need to know her valley and her story. Her beloved grandmother, famed for her cooking. Her father – a chef himself – with a passion for precision and perfection. Her early success as South Tyrol’s youngest head chef, the accolades at the gourmet restaurant Artifex and finally her homecoming to the Toule. Back to the place where Tina Marcelli’s visions are finally coming to life.
KIM MARCELLI
Kim realised early on: happiness wouldn’t come from a desk job.
But in the world of fine flavours – that’s a different story. She began her career in front-of-house, but it soon became clear her heart belonged in the kitchen. Now, as sous-chef, Kim Marcelli is exactly where she’s meant to be. Her second great passion? Photography. Many of the stunning food shots from JOHANNS are hers.

For more than ten years, Sandra has stood by Tina Marcelli’s side as head pastry chef. Her apple strudel is the stuff of legend – and so is her versatility. Though sweet treats are her signature, Sandra also has a remarkable touch for savoury creations. Her deep bond with nature finds its way into each and every one of her dishes.
